The National Foundation for Celiac Awareness invites you to attend and participate in the first-ever Northwest Arkansas Celiac Awareness & Education Day. Join area physicians, dietitians, restaurants, chefs, food industry leaders and families affected by celiac disease and gluten intolerance at this exciting event.
The program will have three parts: a morning session discussing the Gluten-Free Industry, a luncheon and networking session, and an afternoon session discussing Advancing Awareness and Driving Diagnosis.
The Vendor Fair will be open all day.
This program is open to healthcare professionals, members of the food industry and the general public.
General Overview-Celiac Disease:
Celiac disease is an autoimmune digestive disorder that damages the villi of the small intestine and interferes with the absorption of nutrients from food. This damage is triggered by the protein gluten, which is found in all forms of wheat, rye and barley. Celiac disease is unique in that the only way to manage this disease is by adhering to a 100% gluten-free diet. Even consuming a small amount of gluten can be enough to elicit a strong physical reaction.
